Shio Koji Lamb

Marinate Lamb with Shio Koji. It tenderizes the meat and adds nice sweet salty umami!

Materials:
- Lamb
- Shio Koji
- Oil for cooking
- Rosemary

Procedure:
1. Lightly and completely cover lamb with Ship Koji and place inside a Ziplock bag, or you can use plastic wrap. (use three tablespoons of Shio Koji per 1 pound of lamb)
2. Push out any extra air from the bag/plastic and seal. Keep refrigerated for at least 30 minutes to a day (maximum three days).
3. Cook as desired and enjoy!

Note: Since Shio Koji can caramelize easily, wipe off extra before cooking to avoid excessive charring.

Of course, you can apply this recipe to any other meat as well.
