Our Shio Koji contains active koji enzymes that help tenderize meat, poultry, and fish while enhancing natural umami flavor.

How to Use Shio Koji:
1. Marinade
Lightly coat meat, poultry, fish, tofu, or vegetables with Shio Koji. Use about 3 tablespoons of Shio Koji per 1 lb of meat, poultry, fish, or vegetables.
Place in a sealed container or bag and marinate in the refrigerator for 2–24 hours. Wipe off excess Shio Koji before cooking to help prevent burning.
Grill, pan-sear, roast, or air fry as desired. Shio Koji adds savory umami and gentle sweetness while helping create deeper flavor.
2. Salt Alternative
Use Shio Koji as a flavorful salt alternative in sautéing, soups, sauces, dressings, and marinades.
As a general guide, use 2 teaspoons of Shio Koji for 1 teaspoon of salt, then adjust to taste.
